Domaine and
vineyard
To
understand where the name "A Trincea" comes from,you have to get right on top of
the hill: waiting for us we find a trench from the Second World War made in
the ground by soldiers, well protected by stones, among which one can still see
a reed machine gun bullets and the tape leads devoured by time and rust. Also
on display a helmet.
Dino
Masala, building contractor, and his sons have turned this hill into a small
microcosm of biodiversity, drawing 25,000 meters of dry stone walls and by
planting olive trees of Taggiasca variety and various types of vines, including
rossese. A huge project, closely linked to the recovery of technical and
manual skills from the past.
In
ricostructing and maintaining these ancient traditions, the wine is produced
according to ancient customs, without watering the plants and nourisheing them
with organic materials, avoiding any use of chemicals or herbicides, hoeing the
soil by hand, by cutting the surface roots so that the remaining spill into
rock crevices in search of water and nutrients.
Only
in the first years of life, when plants suffer much drought, the leaves are
watered at sunset. Going forward in the years the vineyard will no longer need
water and will be more and more resistant to disease, making it almost useless each
treatment.
The wine
The name of this wine dates back several centuries ago. Probably the
first appearance of this name has around 1200 and comes from the fact that the
vines were grown on rocky ground where grew, planted in the little bit of land
that could be found between the rock and the rock, the shoots left meander at
will , such as ivy, while the grapes were tied to stakes so not to touch the
ground and absorb the heat released from the stones.
The grapes of a high sugar content, giving a fine wine, both white and
red, and endured long journeys without any change neither in color nor in
flavor.
The Roccese Rosso is obtained from the pressing of grapes rossese and
other indigenous grapes. The wine matures in stainless steel barrels for twelve
months. Upon visual examination presents a ruby red color. His interesting
point lies surely in the olfactory where he explodes his extraordinary bond
with the territory. Clear are the scents of herbs and medicinal plants typical
of the vineyard.
In the mouth the wine seems at first light. You have to let it breathe a
bit before you feel fully express themselves with a strong attack and smooth and
pleasant tannins.

The wine holds up well pairing with red meats and cheeses; However it is
considered more suitable for white meat dishes such as goat and rabbit but also
small birds like thrushes and doves, or tasty fish like the cod.
This wine was an unexpected finding, as with all things in life that
leave their mark. A story of passion, perseverance, respect for nature and
tradition. There is much more that of the grape juice in this glass.

But never go between New Year and Easter ... they told me that Mr. Dino
