All in compliance with the peasant tradition that has made this land and the choice to produce wines as naturally as possible, using only indigenous yeasts, without clarifying or filtering. The aging of the wine takes place in oak barrels (French and Slavonian depending on the type of wine) in a cellar at constant temperature.

The wine
Let's start from the name and the its story. The yield is the amount, in tons per hectare, of grapes produced in a vineyard. That of Barolo, on average, is around eighty quintals. The 2010 harvest has been characterized by a terrible hailstorm that has significantly damaged the vineyards of this company; in particular in that it comes from their Barolo cru is the final yield was 56 quintals. It has turned out an even more concentrated and powerful wine that pushed manufacturers, in that particular parcel, to maintain steady production yield of 56 quintals / hectare and to continue the production of this Barolo.RESA 56 Barolo DOCG is a Nebbiolo. The vinification takes place in steel tanks at controlled temperatures with maceration on the skins for 4 weeks. The wine is aged in large oak barrels for about 24 months and completes its production process with aging of 12 months in bottle.

Food pairing
The wine holds up well pairing with pasta dishes with meat sauce, red meats and aged cheeses; but also by itself it remains a pleasure to taste.

Let's egin with the name: a yield of 56hl / ha, for many producers is a huge amount. Here in Barolo a markedly low figure. Surely then a figure on which to start a reflection on the Barolo potential and market distortions. The product that comes out is a fairly concentrated Barolo, with a good body, rich in scents and with a flavor that leaves you in the mouth a nice feeling of freshness. So a Barolo from "meal" that despite the high alcohol content remains drinkable and pleasant without giving at once to the head. An honest product, good I would say, that the market and the international appeal of Barolo allow to sell to a major price.
