Domaine and vineyard
The Domaine Saint-Louis Jayne
belongs to the Jayne family since 1893. The vineyards are divided into several
parcels located in the area of the "Couronne de Charlemagne" in the
foothills overlooking the seaside village of Cassis, in an unspoilt, sheltered
by Mistral gusts that sweep the region. Until the nineties of the last century
at the head of the company was Alphonse Jayne (also known as Fonfon, hence the most
prestigious cuvee name of the company) that for sixty years had cultivated the
different parcels mixing vines and fruit trees or vegetable garden. The
real revolution takes place in 1996 when Laurent, grandson of Alphonse, once
completed his studies in Avignon, takes the reins of the company.
In that year the domaine takes its current
name and Laurent decides to plant and cultivate all nine grape varieties
authorized by the AOC Cassis, including the almost disappeared pascal blanc. The
work in the vineyard follows as much as possible the natural methods and the
principles of agriculture "raisonné". Same in the cellar where the
work of man is limited to a minimum.
It follows a limited production, in
line with the Cassis AOC standard, and viticulture, as the same Laurent does
not fail to remember, without compromise.
The wine
The cuvée Fonfon 2015 comes from a selection
of different parcels. It is a blend : 35 % Clairette, 35 % Marsanne, 10 %
Bourboulenc, 10 % Ugni blanc, 10 % pascal blanc . The wine stays on the lees
during maceration and is then transferred to stainless steel tanks. It can be drunk
now but the wine evolves and holds up well aging up to ten years .

Food and wine pairings
Drunk
fresh is perfect as an aperitif, with dishes from sweet and sour taste, or with
tasty fish soups. Served slightly warmer, it loses some of the acidity,
marrying well to timbales of vegetables with raisins or sweets made with dried
fruit.
There
are several reasons why it's worth trying this wine: the first Pascal Blanc,
one of the vines that comes into this blend and that is unique. Then for the
for producer, careful to respect the environment and lover of a viticulture
without compromises. Finally for the AOC Cassis, tiny French enologic reality capable of offer results (and views) breathtaking.
The
wine is great, with a balance of flavor and perfect acidity and a hint of
sweetness in the taste that makes it really special.
Color
is a bright straw. The sense of smell are the white flowers to lord while in
the mouth the taste is fresh and fruity with good body and texture and a fairly
good persistence on the notes of a honey sweetness and peach. I confess I
went to Cassis, this time, just to buy this wine. And I am more than satisfied.
