The Domaine Enclos de la Croix is ​​the story of a family saga: the family Frezouls has been at the head of this domaine for eight generations, since 1814 that marks the birth of this reality. The Domaine covers 24 hectares of land, fenced with dry stone walls, which are the heritage and legacy of this family.The Domaine is located in the town of Lansargues, in the Petit Camargue, with the sea and the ponds in the south and the mountains of the Cevennes in the north, enriched by the marine iodine and swept by Mistral and Tramontana.Historically the company was producing wine for the French Armed Forces, with a production therefore focused on quantity. A big change takes place in the 1970-1980 period: the vineyards of Aramon and Carignan, give way to Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Manseng; yields are checked and production, fell from 5000 to 1000 hectoliters in the name of quality. All with the passage of Organic Agriculture.A continuous path becoming, true to the motto of Frezouls family: "histoire, tradition, goût du changement et modernity» 


The wine 
L'Enclos de la Croix La vie à dents pleines 2015 is a Cabernet Sauvignon. The vines are trained to cordon Royat on calcareous soils, with an average yield of 61 hl / ha. The harvest follows an immediate pressing and fermentation at controlled temperature (16-18 ° C). The wine then rests in steel tanks for six months prior to bottling and marketing.

Food and wine pairings
The wine is drunk as an aperitif, accompanying canapés and appetizers. Another interesting combination is with shellfish or fish dishes.


The transition from native grapes to international varieties is, in my royalties, a minus of this manufacturer that otherwise would receive only plaudits: family-run, organic, land owner, taste for innovation and experimentation.
La vie à pleins dents is a prime example of this last aspect: making white wine using red berry grapes is a very interesting experiment.
The result is a fresh, slightly citrus almost ethereal in body and texture. A perfect wine for an aperitif. A wine that I really liked.
